HOW DOES CRUSHED BLACK PEPPER GROW?

The colour of the peppercorns is determined by the moment of harvesting. Crushed black pepper is actually the berry of this tropical plant. At the moment the berry turns from green to red during its ripening process, it is picked and dried in the sun for 3 to 4 days. This gives the spice its brown to black colour. It is then crushed into small chunks between 1.2 and 2 millimetres in size.

Because the peppercorns have already been partially loosened, it is easier for the spice to release its flavour to the other ingredients in the dish.
