Powdered cardamom
Cardamom is a very old spice from all over the world. It is native to the East, where it grows wild in the forests of the western ghats in southern India. Cardamom is the most costly spice after saffron. The seeds of a ginger-like plant are used to make cardamom. The pods have a triangular cross section and are oval or oblate in shape. Their dry surface is rough and wrinkled, with deep wrinkles in the big blacks. The pod has a rough paper texture to it.
The seeds are sold loose or ground, and the pods are supplied whole or split.
Pungent, warm, and aromatic bouquet. When prepared in Indian substantial dishes like pulses, the pods can be utilized whole or divided. Otherwise, the seeds can be mashed with other spices or bruised and cooked before adding the major ingredients to the pan.
Keep the pods whole until you’re ready to use them. The pod itself has a neutral flavor and is rarely used because it imparts a harsh bitter flavor when left in food.
Cardamom is a stimulant and carminative that is not utilized in Western medicine for its own characteristics. Instead, it is used as a flavoring and base for therapeutic preparations for indigestion and flatulence that contain other drugs, forming a synergetic interaction with them.
It was thought to have sexual properties by the Arabs (it appears frequently in the Arabian Nights), and it was thought to be a remedy for obesity by the ancient Indians. Since ancient times, it has been utilized as a digestive aid.
By macerating seeds in hot water, you can make a therapeutic (and possibly aphrodisiac) cordial.
The simplest type of cardamom to use in recipes is cardamom powder (as opposed to buying the pods whole). It’s as simple as that. Approximately 10 entire cardamom pods are equal to 1.5 teaspoon.
