This premium cocoa powder contains twice as much fat as conventional cocoa powder, with a fat level of 22 percent to 24 percent! The PH of this lightly alkalized cacao is 7.0-7.2.
Cocoa powder is an unsweetened powder made from the seeds of the cacao, or cocoa tree, which is a tropical evergreen tree. These seeds, sometimes known as beans, are fermented before being dried and roasted. The hulls of the beans are removed after roasting, and the beans are then processed to extract the fat, which is known as cocoa butter. The remaining solids are processed into cocoa powder, which is subsequently sold. Cocoa powder, on the other hand, can be prepared before the Butter is extracted. This produces a richer cocoa with 52-54 percent fat content.
