White pepper and black pepper are both fruits that grow on a flowering vine. The only distinction is in the manner in which they are handled. When the fruits are gathered when they are about ripe, they are roasted or dried in the sun until the hulls turn dark black. The hull is removed from white pepper during the cleaning process before it is dried.
Because the essential oils are concentrated in the hull, black pepper has a more lemony, woody, and peppery-pungent scent. White pepper has a greater pungency and heat than black pepper, with less scent and flavor.
Pepper has long been regarded as one of the most sought-after spices. Many people thought it was black gold, and it was worth even more than the gleaming metal. It was only available to the wealthy in Europe until around 1800, when it became more widely available. Pepper now accounts for one-fifth of global spice trade.
Because white pepper does not discolor or mottle uniformly like speckled black pepper, it is widely used in sauces and mashed potatoes. White pepper is commonly used in Chinese cuisine because of its sharpness.
