Bael, or wood apple, is a native of India, Malaysia, Thailand, Sri Lanka, and Southeast Asian countries. It is also known as Bilva in Sanskrit, Bilva Pazham in Tamil, Bilva or Maredu Phalam in Telugu, and Bengal Quince.
Bael, botanically known as Aegle marmelos, is a medium-sized tree with slender branches and pale brown bark that frequently oozes a tasty gum. The leaves of bael are particularly distinctive; they are trifoliate, which means that each leaf has between four and twelve pairs of side veins that meet at the margin.
Although the terms are interchangeable, the term ‘Wood Apple’ should not be confused with another similar fruit called Kaitha Bael in Hindi, Velaga Pandu in Telugu, or Vilam Palam in Tamil, which goes by the botanical name Limonia acidissima. These two fruits are not interchangeable due to their taste, color, and properties.
Bael fruits are globose in shape, have a tough shell, and do not split open even when fully ripe. Raw fruits are greenish grey in color, while the woody skin turns yellow as they ripen. When fully ripe, the fruit includes a fragrant pulp containing approximately 10 to 15 seeds wrapped in a sac filled with natural glue.
